Rolls of roasted eggplant with cheese and tomatoes

Products:

for 6 portions
 
2 eggplant
100 g of cheese 

1 tomato  
50 ml. cooking oil 
black pepper 
salt

Recipe:


Eggplants (2 pcs) are cut into thin slices, add salt and leave for half an hour to stay until released bitter juice. Then washed and dried. Sprinkled with oil and arrange in a baking dish covered with foil and bake until full mode.

Each slice of eggplant screw roll, in rolls are placed pieces of fresh tomato and cheese. Rolls sprinkled with a little salt and pepper and served chilled.

Optionally can be irrigate with sweet and sour sauce or mix of honey and lemon juice in equal quantities
